In Maximo Bistrot Local we share the  passion for local cuisine.

We find our ingredients from the local and traditional markets in Mexico City 
We focus on providing a unique and different experience on every visit, through a daily menu based on the best ingredients found in vibrant markets.
For us it is very important to support the local market, therefore, the furniture, dishes and all the details (even the napkins) were created by artisans through fair and sustainable system of trade.

We create dishes using only fresh ingredients, seasonal and locally sourced, and those products that are not in the region are selected so that no more than 24 hours traveling overland from their place of origin to our kitchen.

The history of our dishes is written every day. Every morning, our kitchen staff visit markets where the chef is inspired by the brightest day ingredients (fish, meat, vegetables and spices) to create incredible culinary delights.

A new daily menu means a unique experience at each visit.
